This condensed or “liquid” smoke is the ultimate in healthy food flavouring. It is made by burning fresh cut wood chips at extremely high temperatures and moisture levels. There is nothing synthetic about it. It can be used in sauces, dressings, casseroles, and stews to great effect – the ideas are endless. It is very concentrated, the rule is: experiment with discretions as too much really is too much! Store in cool dark place.
